Vegetable Pulao Recipe

Vegetable pulao is known as veg pulao or pilaf. Pulao is a one pot rice dish made with aromatic spices and mixed vegetables.  Various types of vegetables can be used according to your preference.

I have shared vegetable pulao recipe in step by step method with a detailed picture below.

In a deep bottom pan heat ghee or oil add all the whole spices cardamom, Cinnamon sticks, bay leaf, whole pepper and cloves fry them in a hot ghee till the ghee are aromatic.

Add sliced onions saute till the onions changes transparent add chopped ginger garlic saute till the raw aroma goes away.

Add chopped vegetables saute for 2-3 minute. Srinkle with salt.

Measure the water double the quantity to the rice . Squeeze 8-9 drops of lemon. Bring the water to a rolling boil.

Next add drain rice

Cook on a medium heat until the water evaporates .When the rice is still soggy , cover the lid. Cook on a low flame for 5-7 minutes.

Once the rice grains are cooked . Let it stand for 5 minutes. Serve veg pulao hot or warm with a simple raita or gravy.

INGREDIENTS

  • 2 cups or 400 gram of long grain rice / basmati rice
  • 1 1/2 tablespoon ghee or oil
  • 1 cinnamon stick
  • 2 cardamom
  • 1 bay leaf
  • 3-4 cloves
  • 8-10 pepper corn
  • 250 gram mixed vegetables
  • Salt as needed
  • 1 medium size sliced onion
  • 1 teaspoon chopped garlic
  • 4 cups water

INSTRUCTIONS
