Ambur Star Biryani recipe | How to make Ambur Biryani

Ambur star biryani is one of the special dum style biryani recipe. Ambur is a town in vellore district famous for biryani and leather. Authentic recipe is to cook mutton in a pressure cooker. Rice is par boiled later rice and mutton are cook together in dum proces. Earlier seeraga sambha rice was added for the biryani. Now both basmati or seeraga sambha rice are included for the recipe.

I have shared mutton biryani recipe in step by step method with a detailed picture below.

Wash and soak rice for 20 minutes.

In a deep bottom vessel heat oil add cardamom, cinnamon ,cloves and bay leaf add thin sliced onions saute till the onions turns golden brown.

Add ginger garlic paste , mutton and green chilies saute till the mutton changes its color to light brown.

Add red chili powder, sliced tomatoes saute till the tomatoes changes tender.

Let it simmer. Now add yogurt and salt add 1 cup of water. cover the lid and pressure cook for 4-5 whistle. As pressure released open the lid add squeeze lemon and add chopped coriander leaves and mint leaves.

In another vessel bring water to boil add salt. Add rice into it cook until 75% done.

Strain the rice in a colander.

Meanwhile heat the mutton gravy. Add the cooked rice. Mix gently with the mutton mixture. Cover the lid tightly place any  weight of the vessel on top of the lid. Do not let the steam out. Keep it for dum on a low flame for 20 minutes.

Serve Ambur biryani with onion raita, and ennai kathrika.

  • 2-3 cinnamon sticks
  • 4-5 cloves
  • 2 bay leaf
  • 4-5 sliced medium size onions
  • 1 1/2  tablespoon ginger garlic paste
  • 1 kg mutton
  • 5 tomatoes
  • 3 teaspoon red chili powder
  • 4-5 green chilies
  • 250 ml thick yogurt
  • 1 tablespoon lemon juice
  • 1/2 cup Coriander leaves and mint leaves
  • 1 kg seeraga sambha rice

INSTRUCTIONS
