Vendakkai poriyal is made from simple ingredients that most Indian kitchens do have. It is best served as a side dish for rice,ghee and sambhar in south Indian cuisine.
I have shared vendakkai fry recipe in step by step method with a detailed picture below.
In a hot tawa dry roast urad dal, chana dal, sesame seeds, coconut roast until dal changes slightly golden brown.
In a blender add the roasted dal, whole red chilies and coconut blend to a coarse powder.
In a kadai heat oil add curry leaves when it begin to splutter add chippedconions saute till the onions changes transparent.
Now add ladies finger keep stirring the ladies finger on a medium heat.
Add cumin powder,turmeric powder, dal coarse powder
Mix and stir fry the vendakkai unti its cooked completely.
Serve vendakkai as a side dish for rice.
INGREDIENTS
- 250 gram ladies finger
- 1 medium size onion
- 10-12 curry leaves
- 1 tablespoon oil
- 1/2 teaspoon turmeric powder
- Salt as needed
- 1 teaspoon cumin powder
FOR DRY ROAST
- 1 teaspoon urad dal
- 1 teaspoon chana dal
- 1 teaspoon sesame seeds
