Mumbai scrambled eggs , spicy , perfect with roti or sandwich . Anda bhurji is one of the Mumbai fast selling street food. This scrambled eggs differ with the taste of pav bhaji masala . You can replace 2 tsp of pav bhaji masala with 1:1:1 Red chili powder , garam masala powder and cumin powder
I have shared below step by step recipe with detailed pictures for easy understanding
In a wok heat butter and oil
Add chopped onions saute till the onion color changes transparent , add ginger garlic paste , saute till the raw aroma goes away
Add chopped tomatoes , green chili saute until the tomatoes are lightly softened but not very mushy . Add pav bhaji masala stir well . In a bowl break eggs whisk the eggs until light and fluffy .Now add the egg mixture and coriander leaves to it . Let it simmer and cook for 5 more minutes .
Stir the eggs until they have crumbly texture . Switch of the flame
Serve egg bhurji with bread or Roti

- 2 medium size onions
- 2 chopped tomatoes
- 1 green chili
- 2 tbsp. coriander leaves
- 1 tbsp. butter
- 1 tbsp. oil
- 1 1/2 tsp pav bhaji masala
- Salt as needed
