The best zarda is one where each grain of rice is long, separate and form with no evidence of mush or overly softened rice, coated in the sugar syrup it doesn’t even need much garnishing to make it look stunning. Finished of with nuts. Zarda is best served warm.

A popular north indian flavoured rice recipe prepared with basmati rice, saffron and sugar. the dish is typically served as a dessert after the meal or perhaps during the meal during the special occasions and celebrations. generally, the dish has a bright yellow in colour with its appearance due to the use of saffron.

I have shared zarda recipe in step by step method with a detailed pictures below.

Wash and rinse the Basmati rice till the water runs clear of starch. Then soak the rice in water for at least 30-45 minutes.

In a large pan heat ghee add cardamom, cinnamon sticks.

Now add chopped nuts. Heat this on a medium heat, stirring often to roast the nuts well till light golden brown.

Now add water and bring it to boil.

Add rice and yellow color. Cook on a medium heat.

Meanwhile in another pan add sugar and water.

Make a sugar syrup of one string consistency, squeeze lemon to it.

Pour the sugar syrup on the cooked rice, cover the pan and turn the heat to the lowest setting possible. Allow the zarda to steam for 8-10 minutes.

Once done let the rice rest for 5-10 minutes before serving.

INGREDIENTS:

  • 1 cup basmati rice/Long grain rice
  • 2 cup water
  • A pinch of yellow color or saffron
  • 1 1/2 tablespoon ghee/clarified butter
  • 2 cardamom
  • 1 cinnamon stick
  • 1/4 cup chopped nuts

FOR SUGAR SYRUP

  • 2 cup grated sugar
  • 1 cup water
  • 1/2 lemon

INSTRUCTION:
