Tricolor Halwa – The key to making the best tricolor Halwa lies in the ratio of semolina, water and sugar. It is more similar to the classic Indian dessert like rava kesari, suji Halwa. On occasion of Independence day I have made a variation of Halwa by adding tricolors of Indian flag.

I have shared tricolor Halwa in step by step method with a detailed pictures below.

In a thick pan heat ghee add cardamom and cinnamon sticks pour water.

When the water starts boiling hot add food colour.

Now remove the cardamom and cinnamon sticks. You can also use cardamom powder and cinnamon powder and avoid this step.

Add semolina/ rava constantly stir throughout the halva process, otherwise it will burn add sugar mix well.

Sugar will dissolve completely and the rava mixture turns gooey, keep stirring and cook until the mixture thickens and the moisture is evaporated.

Cover the lid and cook for few minutes.

Repeat the same process for another two layers.

According to your desired order of layering, decide the order of semolina mixtures to be cooked. Since I intended to invert the pan later, I chose orange first. Place the orange Halwa on bottom of the serving pan, then place the white layer and green layer on top

Allow it to cool completely . The halva has enough ghee that it will come out easily, and if you pack it well enough, it won’t crumble either. flip the halwa

Garnish tricolor halwa with chopped nuts as per your choice.
