Phirni recipe | Rice Pudding recipe

Phirni is a light creamy sweet made of rice granules, addition of saffron strands and rose water gives a nice aroma to the dish. Phirni is otherwise known as rice pudding. It is served chilled.

Dissolves saffron in a warm milk.

Put basmati rice in a colander. Wash the we Qyurice with cold water 3 times. Drain water and put the rice on a kitchen paper to dry. Leave it in the sun for an hour. Then, grind the rice along until you have tiny granules in a powder form.

Boil milk and quickly add rice granules.Lower the heat and cook for few minutes, stir the mixture in intervals as no lumps formed. Add sugar.

Add khoya and chopped nuts. Add saffron Stir well.

Allow is to cool completely and refrigerate it in a sealed container. Once the phirni has chilled, spoon it into serving bowls. Top with chopped almonds. Serve immediately.

INGREDIENTS

  • 1 litre milk
  • 1/2 cup basmati rice
  • 2 tbsp khoya( optional)
  • 1/2 cup sugar
  • 1 green cardamom
  • 1 cinnamon sticks
  • 10_12 strands saffron

INSTRUCTIONS

  • Put basmati rice in a colander. Wash the rice with cold water 3 times. Drain water and put the rice on a kitchen paper to dry. Leave it in the sun for an hour. Then, grind the rice until you have tiny granules in a powder form.
  • Dissolve saffron in a warm milk.
  • Boil milk add rice granules cook on a low flame stir in an intervals to avoid lumps. Cook until the milk and rice are in thick consistency like a custard.
  • Now add sugar, khoya, saffron Stir well.
  • Add chopped nuts allow it to cool.
  • Once the phirni has chilled, spoon it into serving bowls. Top with chopped almonds. Serve immediately.
