Kesari Kofta Gravy

Kesari or Saffron is a rich aroma , used to flavor in hot milk ,sweets etc . A few strands of saffron enhance the entire dish with rich delish flavor and color . Here I have used kesari to flavor a curry to which soft, melt in your mouth Paneer kofta have been added.

I have shared step by step method below

In a mixing bowl add paneer crumbs , mash potatoes , corn flour , red chili powder , cumin powder and saffron milk.

Mix all the below ingredients , knead like a dough . Add more corn flour or bread crumbs if the dough is sticky

Divide the dough into small portion and shape each portion into round kofta. Heat oil in a kadai deep fry the koftas in it till golden brown.

Drain on absorbent paper and keep aside

Combine onion , ginger, garlic, red chili ,coriander powder ,whole cumin ,almonds ,geeen chili and turmeric powder

Add all the above ingredients along with cardamom and cinnamon stick , blend in a mixture to a smooth paste

Heat oil in a kadai , add the above prepare paste saute on a low flame, till the paste turns golden brown. Add salt

Add tomato puree and thick yogurt mix well.

Add the rest of saffron milk , fresh cream . Simmer for 1-2 minutes.

Pour the hot gravy over the koftas , serve immediately

INGREDIENTS:

FOR KOFTA

  • 1/2 cup mash potatoes
  • 1/2 cup paneer crumbs
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tablespoon corn flour
  • 1 tablespoon bread crumbs ( optional )
  • Salt as needed
  • 2 tablespoon dissolved saffron milk
  • Oil for deep frying

FOR GRAVY

  • 1 small onion
  • 2 tablespoon ginger & garlic
  • 2 whole red chili
  • 1 Cardamom , 1 Cinamon
  • 1 tsp whole cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric
  • Medium size tomato
  • 1/4 cup yogurt
  • 1-2 tbsp. fresh cream
  • Salt as needed
  • 2 tbsp. Oil.
