Instant Jalebi Recipe

Jalebi is a popular sweet in Indian cuisine. Jalebi are made with a fermented batter in a concentric circles dunk in a hot sugar syrup gives crunchy, juicy sweet taste. Instant Jalebi is made with baking soda or baking powder or eno. Here I am sharing the instant Jalebi Recipe with eno. The reason I have used eno is to ensure that eno ferments the jalebi batter quickly and holds the sugar syrup inside the jalebi.

 

I have shared instant Jalebi Recipe with enough in step by step method with a detailed pictures below.

In a saucepan add half kilo sugar to 1 cup of water bring to boil. Keep stirring till sugar dissolves.

Once the sugar dissolves add milk.

Milk is added To remove the dirt from the sugar syrup. Discard.

Add lemon, cardamom, saffron, and Kesari color boil till you get one string consistency to the sugar syrup. Remove from heat.

In a blender add urad dal.

Blend to a fine powder. Just to ensure no whole urad dal left behind. otherwise it will stuck in piping bag. Sieve urad dal powder.

In a mixing bowl add all purpose flour, urad dal powder, clarified butter/ ghee and eno mix well.

Gradually add water.

Stir well in a whisk or spoon. Make a thick batter.

Pour the batter in a piping bag or zip lock bag or sauce bottle . Place the piping bag in an empty glass pour the batter.

Heat oil in a pan or kadai pour half inch oil. Cut the piping bag make jalebi by pouring the batter in concentric circles.

Flip and cook both sides till Jalebi turns golden brown. Drop the Jalebi in warm sugar syrup immediately. Will dunk the Jalebi in a sugar syrup for a minute or two.

Finally serve Jalebi hot, warm or at room temperature.

INGREDIENTS

For Jalebi

  • 125 gram all purpose flour/ maida
  • 20 grams ghee/ clarified butter
  • 40 grams eno or 1 1/2 teaspoon eno
  • 4 tablespoon urad dal powder
  • 1/2 cup water

For Sugar Syrup

  • 500 grams granuled sugar
  • 1/2 lemon wedges
  • 1/4 teaspoon saffron strands
  • 2 cardamom
  • A pinch Kesari color
  • 1 cup water
