Egg Vermicelli recipe | Make vermicelli at home

Egg Vermicelli recipe is an old age traditional recipe cherished by all. It is another healthy breakfast recipe prepared with a thin noodles or asian noodles. Its a very common dish prepared in my home town which can be easily extended to other variations too, you can add Minced meat, Chicken too as per your requirements. Children will love it since it resembles the not so healthy noodles available in the market. As an alternative, I prepare this dish for my kids. The whole family loves.

I have shared a simple egg recipe in step by step method with a detailed picture below.

In a wok or kadai heat oil add chopped onions saute till the onions are transparent.

Add chopped tomatoes saute till the tomatoes changes to soft and tender.

Now add red chili powder, turmeric powder and salt stir well.

In a mixing bowl add eggs whisk well with the help of a fork or whisk pour into onions mixture.

Cook the eggs on a low flame for about 7-10 minutes. sprinkle with fresh coriander leaves. Once the eggs are done scramble the eggs let it simmer and cook for another few minutes.

Meanwhile boil 3-4 cups of water in a vessel add salt when the water starts boiling add vermicelli and a teaspoon of oil to avoid sticking.

Thin vermicelli cooks very fast once the vermicelli is added to the water gently mix and allow the vermicelli to get one or two boils on a high flame then remove from the flame strain in a colander. Approx cooking time for thin vermicelli is 3-4 minutes.

Now add the vermicelli to the egg mixture gently mix once, remove from the flame. let it rest for 5 minutes before serving.

Finally serve egg vermicelli hot for breakfast.
